Big Big Man made some of his famous salmon on the barbecue the other day, and it was so freaking good, I want to share it with the world. This is good for two or three filets.

Salmon marinade

2 tbs maple syrup
2 tbs soy sauce,
3 tbs lemon or lime juice
1 tbs grainy mustard
2 garlic cloves, minced
Ginger, grated

Whisk it all together. Pour over salmon. Let it sit for up to an hour. Grill or bake.

You can leave out any of these ingredients if you don't happen to have them around. That's the beauty of the recipe. Usually, Big Big Man uses honey, but we had run out, so he tried maple syrup and the results were gaaaarrgggg (Homer Simpson drooling sound).

And there was that recent Nutrition Action story about how meats that are marinated -- even just dipped in marinade -- produce a lot fewer harmful toxins when they're barbecued. I didn't save the story and unfortunately, it's not on their Web site, but take my word for it -- you'd much rather have this marinade bathing your salmon than a bunch of carcinogens.
